Perugia (PG) - Perugia loc. S. Egidio. From August 6th to 15th Sant'Egidio will be holding its festival devoted to Torta al testo, an extremely old variety of pizza made using flour and water, and tradiitonally baked under hot ashes. The absence of salt in the dough makes this an excellent accompaniment to cured meats.
